Healthy Red Velvet Cupcakes


You won't believe how delicious these Healthy Red Velvet Cupcakes taste- and they're under 200 calories each (frosting included)! A secret healthy ingredient gives the signature red colour without dyes or preservatives, and they're topped with a creamy, finger-licking chocolate frosting.

Enjoy for Valentines Day or any day of the year!

Ingredients:

-2 eggs

-15 oz drained can beets

-1/3 cup extra virgin organic coconut oil

-1 1/2 tsp vanilla extract

-1 cup unsweetened almond milk

-1 Tbsp lemon juice

-1/2 cup coconut sugar

-1/2 tsp sea salt

-1 Tbsp unsweetened cocoa powder

-1 1/2 cups gluten-free all-purpose flour

-1/2 cup almond flour

-1 Tbsp baking powder, gluten-free

**Frosting recipe below

Instructions:

1. Preheat oven to 350 degrees

2. Blend eggs, beets, coconut oil, vanilla, almond milk, lemon juice, coconut sugar, sea salt and cocoa powder on high

3. Stir in: flour, almond flour, baking powder

4. Blend on high

5. Use a 1/4 measuring cup to pour batter into muffin cups

6. Bake at 350 for 18-30 minutes

To make Frosting, blend the following ingredients:

-5 Tbsp coconut sugar

-1 tsp (GMO-free) corn starch

-2 medium ripe avocados

-1 Tbsp plus 1 tsp fresh lemon juice

-1 1/2 tsp pure vanilla extract

-1/4 cup unsweetened cocoa powder
